whole wheat carrot muffins.


In effort to entertain myself and be kind of healthy, I made something with whole-wheat flour. It even has a vegetable in it. Killing 2 food groups with 1 stone.

I like carrot cake. I love hummingbird cake. With a combination of brown sugar, shredded carrots and walnuts I figured these would be pretty good and they were. I tore the recipe out of the latest Coastal Living magazine that I found at work and strapped on my apron last weekend:
