fast food: halibut.


A few weeks ago I made some ridiculously good fast food. I cannot believe I pulled this off and how quickly it all went down.  Maybe $35 halibut fillets cook faster than others?

Went to Eataly with Josh for a beer on the roof, but my real intention was the produce and fish counter downstairs. Figured I'd bribe him with beer to get a good grocery run in. We picked up some very expensive, but beautiful looking halibut. Cherry tomatoes, summer squash, basil and white wine. That is all you need. Oh, and shallots. 

Literally - toss all items into a piece of parchment. Drizzle items in parchment with olive oil and white wine. Put in the oven at 400 degrees for 10-15 minutes (depending on how big your fillets are, mine were big). Pour yourself a glass of wine. Remove from oven and serve with baked lemon risotto
